Ingredients

2 tablespoons reduced-fat mayonnaise
2 teaspoons ketchup
2 teaspoons chopped capers
1 teaspoon chopped pickles or 1 teaspoon relish
3 teaspoons olive oil , divided
1 small red onion , thinly sliced
1 cup sliced mushrooms
5 cups Baby Spinach
fresh ground pepper
4 slices rye bread
1/2 cup shredded reduced-fat swiss cheese
1/2 cup sauerkraut
This tasty Vegetarian Reuben sandwich is a great option for those looking to reduce their meat intake without sacrificing flavor. Instructions

1.In a small bowl, combine mayonnaise, ketchup, chopped capers, and chopped pickles/relish. Set aside.
2.In a large skillet, heat 2 teaspoons of olive oil over medium-high heat. Add sliced onions and saute for 5-7 minutes until caramelized.
3.Remove onions from skillet and set aside.
4.In the same skillet, add remaining teaspoon of olive oil and mushrooms, saute for 5-7 minutes until tender.
5.Remove mushrooms from skillet and set aside.
6.In the same skillet, add baby spinach and saute for 2-3 minutes until wilted.
7.Toast rye bread slices.
8.Spread Russian dressing on each slice.
9.Layer shredded Swiss cheese, sauerkraut, caramelized onions, mushrooms, and sauteed spinach on two slices of bread.
10.Top with remaining slices and serve.
