1 onion , diced
1/2 cup green lentil
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon ground cardamom
1/2 teaspoon ground cumin

2 carrots
1 teaspoon sugar
1 cup raisins
2/3 cup almonds
2 cups basmati rice
1/2 teaspoon saffron
oil ( for frying )
6 -8 fluid ounces water
Vegetarian Qaubili Pilau is a traditional Afghan dish that is enjoyed across the country. It is typically served at special occasions such as weddings, but it can be enjoyed any day of the week. Instructions

1.Rinse the lentils and soak them in water for 1 hour.
2.In a large pot, add enough oil to cover the bottom and heat it over medium heat.
3.Add the diced onion and cook until it is translucent.
4.Add the cinnamon, cloves, cardamom, cumin, and garam masala and stir.
5.Drain the lentils and add them to the pot, as well as 6-8 ounces of water. Bring it to a boil, then reduce the heat and cover the pot.
6.Cook for 10-15 minutes until the lentils are tender.
7.Peel and chop the carrots into small pieces. Add them to the pot along with the sugar and raisins. Stir and cook for another 5 minutes.
8.Rinse the rice thoroughly and add it to the pot. Stir gently.
9.Add enough water to cover the rice by about an inch. Bring it to a boil, then reduce the heat and cover the pot.
10.Cook for 15-20 minutes until the rice is fully cooked and the water has been absorbed.
11.Meanwhile, soak the saffron in a small amount of hot water for 5-10 minutes.
12.Roast the almonds in a separate pan on medium heat until they are lightly browned and fragrant.
13.When the rice is done, drizzle the saffron water over the top and mix gently.
14.Serve the rice hot, topped with the roasted almonds.
