2 cups water , salted
3 cups Baby Spinach , washed
2 cups low-fat ricotta cheese
1 bunch fresh flat-leaf parsley , chopped
1 lemon , zest of
1/2 cup parmesan cheese , freshly grated , divided
2 lbs russet potatoes , peeled and cut into rectangular blocks
1 tablespoon butter
2 cups marinara sauce , homemade or 2 cups marinara sauce , purchased
salt and pepper , to taste

Instructions

1.Preheat oven to 375°F.
2.In a large pot, bring salted water to a boil over high heat. Add baby spinach and blanch for 1 minute. Drain spinach and squeeze out any excess water. Set aside.
3.In a medium bowl, mix together ricotta cheese, chopped fresh parsley, lemon zest, and 1/4 cup parmesan cheese. Set aside.
4.In a large skillet, melt butter over medium heat. Add prepared potatoes and cook for 10-12 minutes, or until potatoes are fork-tender. Season with salt and pepper to taste.
5.Spread half of the marinara sauce over the bottom of an 8-inch square baking dish. Arrange one layer of potato slices over the marinara sauce. Sprinkle ¼ cup of the remaining parmesan cheese over the potatoes. Spoon half of the ricotta cheese mixture over the potatoes and spread evenly. Distribute half of the blanched spinach over the ricotta layer.
6.Repeat layers, starting with marinara sauce, followed by potatoes, parmesan cheese, ricotta cheese mixture, and spinach.
7.Cover baking dish with foil and bake for 25 minutes. Remove foil and bake for an additional 25 minutes or until the cheese is melted and bubbly.
