Ingredients

8 cups low sodium vegetable broth
2 poblano peppers , seeded
2 jalapeno peppers , seeded
1 lb tomatillo , husks removed

2 -3 zucchini , chopped

radish ( sliced or chopped )

Vegetarian Posole (Slow Cooker) is a vegetarian version of the traditional Mexican stew made with meat and hominy. Hominy is made from dried corn kernels that have been soaked in an alkaline solution to remove the hull and germ. Instructions

3.After 6 hours, remove the peppers and tomatillo and place in a blender. Pulse until smooth, then pour back into the slow cooker.
4.Add in the hominy and zucchini and cook on low for another hour.
5.Serve hot, topped with shredded cabbage, sliced or chopped radish, queso fresco, avocado, chopped onion, chopped jalapeno, and tortilla chips.
