6 cups vegetable stock
1 cup kidney bean
3/4 cup diced tomato
10 ounces diced potatoes ( about 2 medium )

Instructions

1.Heat olive oil in a pot over medium heat.
2.Add chopped garlic and diced onion. Sauté until onions are translucent.
3.Add diced turnip and carrot. Sauté for another 5 minutes.
4.Add chopped kale, soy chorizo, bay leaves, chopped parsley, and chopped thyme. Sauté for 2-3 minutes until kale begins to wilt.
5.Add vegetable stock, diced potato, and kidney beans. Stir well.
6.Bring the soup to a boil, then reduce the heat and let it simmer for about 25-30 minutes, until the vegetables are soft and tender.
7.Once fully cooked, remove the bay leaves. Season the soup with salt and pepper to taste.
