vegetable oil ( for deep frying )
2 cups dashi ( basic Japanese soup stock , OR 2 c. liquid from soaking dried mushrooms , OR a combination of the two )
2 tablespoons soy sauce
2 tablespoons sugar
1 teaspoon sake
