Ingredients

1 1 lb ground chicken or 1 lb baby shrimp
1 teaspoon minced ginger
2 cups finely chopped cabbage ( I use the bagged coleslaw mix at the grocery store )
1/4 lb bean sprouts
1/2 cup shredded carrot ( this is included in the coleslaw mix , so if you use the mix you could omit the carrot )
2 tablespoons oyster sauce
3 green onions , finely chopped
1 package large square egg roll wraps
2 -3 egg whites
nonstick cooking spray
sweet and sour sauce ( for dipping )
soy sauce ( for dipping )
mustard ( for dipping )
catsup ( for dipping )
Egg rolls are a popular snack or appetizer that originated in China. They are made of a crispy wheat flour wrapper and a savory filling of meats, veggies, and spices. This Vegetarian Egg Roll recipe uses a mix of veggies and oyster sauce to create a filling that is flavorful and crunch. The inclusion of either ground chicken or baby shrimp is optional, making it a great option for vegetarians or carnivores alike. Baking the egg rolls instead of deep-frying them makes this recipe a healthier option, while still giving you the traditional egg roll taste and texture. Enjoy them as a snack or appetizer at your next get-together or as a savory lunch or dinner option.

Instructions

1.Brown the ground chicken or baby shrimp in a large skillet over medium-high heat. Add minced ginger and cook until fragrant.
2.Add cabbage, bean sprouts, shredded carrot, oyster sauce, and green onions to the skillet. Cook until the veggies are tender.
3.Preheat your oven to 400°F.
4.Spoon the filling into the egg roll wraps and roll them up tightly. Seal them with egg whites.
5.Spray a baking sheet with nonstick cooking spray and place the egg rolls onto the sheet.
6.Bake the egg rolls for 15-20 minutes, or until crispy and golden brown.
7.Serve the egg rolls with sweet and sour sauce, soy sauce, mustard, or catsup for dipping.

PROS

These egg rolls are versatile in that you can use ground chicken or baby shrimp, and they also freeze well.

They are crispy on the outside and filled with savory and crunchy veggies on the inside, making them the perfect snack for any occasion.

CONS

Egg rolls are often deep-fried, which can make them high in calories and fat.
However, this recipe calls for baking them, which reduces the fat content.

Make sure to use a lean ground chicken for this recipe, as ground chicken can have a high fat content if not carefully selected.

These egg rolls are high in protein and fiber due to the veggies and meat used in the filling. They are also low in sugar and cholesterol due to the lack of sugary ingredients and limited use of oils in cooking.
