Ingredients

1 tablespoon ghee or 1 tablespoon peanut oil
1 onion , sliced
1/3 cup korma curry paste
100 g unsalted cashews , ground
1 teaspoon chili powder
1 3/4 cups vegetable stock
400 g potatoes , peeled , cut into 2cm pieces
2 cups cauliflower , cut into 2cm pieces
1 cup beans , cut into 2cm pieces
1 cup red capsicum , cut into 2cm pieces ( bell pepper )
1/2 cup green peas
1/2 cup thick natural yoghurt
1/2 cup cream
naan bread , to serve
Navratan Korma is a popular Indian dish that translates to 'nine-gem curry'. It is so-called because it is made with a variety of nine different vegetables, each representing a precious gem. Instructions

1.Heat the ghee or oil in a large frying pan over medium heat.
2.Add the onion and cook for 3-4 minutes until softened.
3.Add the korma curry paste, chili powder and ground cashews and cook, stirring, for 1-2 minutes until fragrant.
4.Gradually stir in the vegetable stock and bring to the boil.
5.Add the potatoes, cauliflower, beans, capsicum and peas and stir to combine.
6.Reduce the heat to low, cover and simmer for 15-20 minutes until the vegetables are tender.
7.Stir in the yoghurt and cream and cook for a further 2-3 minutes until heated through.
8.Serve with naan bread.
