Ingredients

40 -50 grape leaves
1 cup brown rice ( soaked in water for 1 hour )
800 g mushrooms ( I used Portobello )
1 onion
1/2 cup parsley ( chopped )
1/2 teaspoon paprika
sea salt , to taste
ground pepper , to taste
1 teaspoon dried thyme
3 bay leaves
1/2 teaspoon ground coriander
1/4 teaspoon ginger powder
2 tablespoons olive oil
Vegetarian Mushroom and Brown Rice Dolmas are an excellent choice for anyone who is looking for a healthy, vegetarian, and flavorful meal. This dish is originally from the Middle East and is made with stuffed grape leaves. The filling is usually made with meat, but in this recipe, we use brown rice and mushrooms for a vegetarian option. Dolmas are a great appetizer, side dish or even main course that can be served with a side salad or hummus. Instructions

1.Remove the stems of the mushrooms and finely chop them.
2.In a large pot, heat olive oil and sauté the onion until translucent.
3.Add the mushrooms to the pot, season with thyme, coriander, ginger powder, paprika, salt, and pepper. Cook for about 5 minutes, stirring frequently.
4.Add the soaked brown rice to the pot and stir until combined. Add 2 cups of water and bay leaves to the pot and bring to a boil. Reduce heat and let the rice cook for about 20-25 minutes until the water has been absorbed.
5.Add chopped parsley to the pot and mix with the rice mixture.
6.Gently wash and prepare the grape leaves. Place each leaf shiny side down on a work surface with the stem end facing you. Spoon a tablespoon of the rice and mushroom mixture onto the leaf (near the stem), fold the edges over the filling and roll. Repeat until all filling has been used.
7.In a large pot, place the dolmas seam-side down and cover with 2-3 cups of water. Let simmer for about 40 minutes.
8.Serve hot and enjoy!
