1/8 teaspoon thyme
3 garlic cloves , minced
1 tablespoon parsley , finely chopped
1/8 teaspoon ground cloves
1 can tomato sauce
2 1/2 cups water
1 vegetable stock cube
3 tablespoons creamy peanut butter
1/8 teaspoon bicarbonate of soda
cooked rice , to serve
Kansiyé is a traditional dish from Guinea, West Africa, made with meat, fish, or vegetables cooked in a peanut and tomato sauce. Vegetarian Kansiyé is a meatless version of this dish that is just as delicious and flavorful. Instructions

1.Rinse and soak the lentils in cold water for at least 30 minutes.
2.In a large pot, heat the oil over medium-high heat. Add the chopped onions, salt, black pepper, and thyme. Cook until the onions are translucent.
3.Add garlic, parsley, ground cloves, and canned tomato sauce. Mix well.
4.Drain the lentils and add them to the pot. Stir well to combine.
5.Add water, vegetable stock cube, creamy peanut butter, and bicarbonate of soda. Mix well and bring to boil.
6.Reduce the heat to low, cover the pot, and simmer for about 30 minutes. Stirring occasionally, until lentils are soft.
7.Serve over cooked rice.
