2 green plantains , cut in half and then halved lengthwise

1 beefsteak tomato , thinly sliced
4 vibrant leaves iceberg lettuce
1 cup mayonnaise
1/2 teaspoon chili powder
1/2 teaspoon ground cumin
1 garlic clove , minced

Jibaritos are a popular sandwich originating from Puerto Rico. Traditionally, instead of bread, they are made with flattened, fried green plantains. This vegetarian version uses vegetarian ham or sausage and American cheese to create a hearty sandwich that is perfect for a quick lunch or dinner. Instructions

1.Heat vegetable oil in a deep skillet to 350°F.
2.Fry plantain slices for 3-4 minutes or until golden brown.
3.Place fried plantains on paper towels to cool, then lay two slices side by side and flatten with a mallet.
4.Season the plantains with garlic, salt, and pepper.
5.Heat vegetarian ham or sausages in a pan until browned.
6.In a small bowl, mix mayonnaise with chili powder, ground cumin, minced garlic, salt, and pepper.
7.Spread spicy mayo over the flattened plantains.
8.Layer tomatoes, lettuce, cheese, and ham or sausage slices on top of one plantain slice, then place the other slice on top to create a sandwich.
9.Repeat for remaining sandwiches.
10.Serve immediately and enjoy!
