Ingredients

1 onion , roughly chopped
4 garlic cloves , minced
1 tablespoon olive oil
scant 2 cups hot water
1 cup dried shiitake mushroom
1 vegetarian beef stock cube
1/4 cup red wine
1 can tomato paste
225 g vegetarian beef strips
1/2 teaspoon curry powder ( mine has a fairly heavy cinnamon note )
1/8 teaspoon cayenne powder
1/2 teaspoon red pepper flakes
1 teaspoon oregano
3 tablespoons honey ( or brown sugar if you 're vegan )
salt , to taste
1/2 cup low-fat cheddar cheese ( good parmesan could also work ) ( optional )
4 pieces naan bread

Instructions

1.In a large pan, heat olive oil on medium-high heat.
2.Add chopped onion and minced garlic, and saute for about 5 minutes.
3.Add hot water, dried shiitake mushroom, vegetarian beef stock cube, red wine, tomato paste, vegetarian beef strips, and all the spices (curry powder, cayenne powder, red pepper flakes, oregano, honey, and salt).
4.Stir to combine well and bring to a boil. Reduce the heat and let it simmer for 20-30 minutes.
5.If desired, sprinkle low-fat cheddar cheese on top and serve with naan bread.
