Ingredients

1 tablespoon olive oil
1/2 cup baby portobella mixed mushrooms , chopped
1 cup onion , diced
1/2 cup green bell pepper , diced
2 -3 garlic cloves , minced
1/2 - 1 teaspoon ground cumin
1/2 - 1 teaspoon chili powder
1 can refried beans
1 1/2 - 2 cups cooked pinto beans ( left whole , or use black beans )
1 cup salsa
1 lb mexican four cheese blend , shredded ( or a mix of cheddar and mozzarella )

pepper
6 whole wheat tortillas

Instructions

1.Preheat oven to 375̊ F.
2.Heat oil in a large skillet over high heat.
3.Add diced onions and sauté for 2 minutes or until soft.
4.Add diced green bell pepper and sauté for 2 minutes.
5.Add chopped mushrooms, minced garlic, cumin, and chili powder. Mix well and cook for 2 minutes.
6.Add refried beans and whole cooked beans, mix well and cook for another 2-3 minutes.
7.Spread 1/2 cup of salsa on the bottom of a large baking dish.
8.Fill each tortilla with the bean mixture and roll up, placing seam side down in the baking dish.
9.Pour remaining salsa over the enchiladas and sprinkle shredded cheese on top.
10.Bake for 20-25 minutes.
