Ingredients

1 tablespoon butter ( melted )
2 tablespoons Dijon mustard ( this is just a guess )
2 large slice white bread ( you need to have thick and wide country-style slices , like Rudy 's Organic Canadian White or your own )
6 slices ham ( INPUT ERROR , IT 'S REALLY FAKE HAM ! I use Smart Deli brand ham-flavored tofu , which is not in the 'Za )
2 slices swiss cheese
2 slices yogurt cheese ( I use plain but herbed yogurt cheese would be yummy in this )
2 slices gruyere cheese
3 tablespoons shredded gruyere cheese ( shredded Swiss is good , so is shredded yogurt cheese , or a mix of the 3 )
This vegetarian take on the classic French sandwich, Croque Monsieur, is made using tofu ham instead of traditional ham. The tofu ham is layered with swiss cheese, yogurt cheese, and gruyere cheese to make a delicious gourmet grilled cheese sandwich. Instructions

1.Preheat oven to 375°F.
2.Brush melted butter onto one side of each slice of bread.
3.Spread Dijon mustard on the unbuttered side of one slice of bread.
4.Layer ham, Swiss cheese, yogurt cheese and Gruyere cheese on top of the mustard.
5.Top with remaining slice of bread, butter side up.
6.Sprinkle shredded cheese on top.
7.Bake on a baking sheet for 12-15 minutes or until cheese is melted and bubbly.
8.Broil on high for 1-2 minutes until cheese is golden brown and crispy. Serve hot.
