Ingredients

2 ounces unsalted butter
1 large yellow onion , halved and thinly sliced into half moons
2 fresh thyme sprigs
3/4 lb cremini mushrooms or 3/4 lb baby bella mushroom , cut into medium dice ( 4-1/2 cups )
1/2 lb shiitake mushroom , stems removed , caps cut into medium dice
kosher salt and freshly ground black pepper
2 tablespoons dry sherry
1 cup walnuts , toasted
1 small clove garlic , minced
1/2 teaspoon fresh lemon juice , more to taste
1/4 teaspoon finely grated lemon zest
2 hard-cooked eggs , peeled and roughly chopped
extra-virgin olive oil , for drizzling
flaky sea salt , for garnish
thinly sliced scallion greens or chives , for garnish
Vegetarian Chopped Liver (Mushroom-Walnut Pâté) is a popular Jewish-American dish that has become an essential appetizer on the holiday table. Instructions

1.Heat a large skillet over medium heat. Add butter, melt it and add onions and thyme. Cook onions until until caramelized (approximately 20-30 minutes).
2.Add cremini and shiitake mushrooms, and season it with salt and black pepper. Cook until it is browned, stirring occasionally (approximately 15-20 minutes)
3.Add dry sherry and cook until it is fully absorbed (approximately 5-7 minutes).
4.Transfer mushroom mixture to a food processor. Add walnuts, garlic, lemon juice, lemon zest and pulse until smooth. Add chopped eggs and pulse for a few times. Season with salt and pepper as necessary.
5.Transfer Mushroom-Walnut Pâté to a bowl or container. Drizzle Extra Virgin olive oil on top. Sprinkle some flaky sea salt and sliced scallion greens or chives.
