Ingredients

1 package nori ( roasted seaweed )
4 cups sushi rice
japanese rice wine vinegar
4 -6 tablespoons sugar
1 cucumber , cut into thin strips lengthwise
2 -3 carrots , cut into thin strips lengthwise steamed
1 -2 avocado , sliced thinly lengthwise
1 bunch green onion , cut into thin strips lengthwise
prepared wasabi paste ( use sparingly it 's really hot ! )
prepared plum sauce
prepared pickled ginger
soy sauce
Vegetarian California Rolls (Sushi) originated in the United States in the 1970s. This sushi features avocado and vegetables, such as carrots and cucumber, instead of raw fish. Instructions

1.Rinse sushi rice and drain in a colander for 30 minutes. Add water to a pot and boil. Add the rice and simmer for 18 minutes.
2.Stir rice vinegar and sugar in a saucepan over low heat to dissolve sugar. Mix the cooked rice with the vinegar mixture in a wooden bowl until it reaches room temperature.
3.Lay a sushi mat flat on a cutting board and place a sheet of nori on top, shiny side down. Wet your hands with water and spread a thin layer of sushi rice over the nori, leaving about 1 inch uncovered at the top.
4.Arrange cucumber, carrots, avocado and green onion over the rice. Roll the mat tightly towards the uncovered nori. Hold the sushi mat firmly and remove it from the roll.
5.Slice the roll into 8 pieces. Serve with pickled ginger, soy sauce, wasabi paste and plum sauce.
