Vegetarian Artichoke Fajitas are a delicious and nutritious variation on a classic Mexican dish. The fajitas are meatless, making them perfect for vegetarians and vegans or anyone looking to reduce their meat consumption. The main ingredients of this recipe are onions, green chilies, and artichoke hearts, which are cooked together in a vegetable broth. The tortillas are warmed and then filled with the vegetable mixture, along with some cheese, sour cream, and salsa. The dish is easy to make and can be served for lunch, dinner, or as a quick snack.

Instructions

.Begin by slicing the onion into quartered pieces, then slice the green chilies into 1/2-inch strips.
.Open the jar of artichoke hearts and drain the liquid before slicing them into quarters.
.In a large skillet, heat 1 tablespoon of olive oil over medium heat and add the sliced onion to the pan. Cook until the onions become translucent, stirring often to avoid burning them.
.Once the onions are cooked, add the sliced green chilies and artichoke hearts to the skillet and toss together.
.Pour 2 cups of vegetable broth into the skillet, cover with a lid, and simmer for 10 to 15 minutes until all the veggies are soft.
.While the veggies are cooking, prepare the rice by boiling it in vegetable broth and then set it aside.
.In another skillet, or on a griddle, cook the tortillas until they become warm.
.To assemble the fajitas, place a few spoonfuls of the vegetable mixture onto each tortilla and sprinkle with cheese, sour cream, and salsa.
.Roll up the tortilla and serve hot.
