9 cups watercress , trimmed
3/4 cup heavy cream , divided
7 egg yolks

Instructions

1.Preheat the oven to 375°F.

6.In a small saucepan, bring 1/2 cup of the cream to a boil.
7.In a mixing bowl, whisk the egg yolks lightly. Slowly pour in the hot cream, whisking continuously, until well combined.
8.Stir in the remaining 1/4 cup of cream, salt, pepper, and nutmeg.
9.Mix in the vegetable purees and chopped roasted peppers.
10.Pour the mixture into the prepared molds, filling them half-full.
11.Place the molds in a baking dish, and pour hot water into the dish until it comes halfway up the sides of the molds.
12.Bake until the timbales are set in the center, about 25-30 minutes.
13.Let them cool in the molds for 5 minutes, then run a knife around the edges and turn them out onto individual plates.
