Ingredients

135 g cauliflower
360 ml coconut milk
1 garlic clove , crushed
1/4 teaspoon ground nutmeg
1 teaspoon white miso
1/2 teaspoon Dijon mustard
1/4 teaspoon soy sauce
1 teaspoon olive oil
2 tablespoons potato flour ( or corn flour )
salt and pepper , to taste
80 g baby carrots
45 g broccoli florets
65 g asparagus , halves
75 g fingerling potatoes ( or small new potatoes )
French baguette , sliced
This Vegetable Fondue is inspired by the traditional Swiss dish, but it's been given a vegan twist. The fondue is made with coconut milk, instead of cheese, and it's packed with fresh vegetables. Perfect for a cozy night in with friends, this fondue is served with sliced French baguette, making it a filling and satisfying meal. Instructions

1.Cut the cauliflower into small florets and place them in a medium saucepan. Add the coconut milk, crushed garlic, ground nutmeg, white miso, Dijon mustard, soy sauce, olive oil, and potato flour.
2.Heat the saucepan over medium-high heat, stirring the ingredients together until the mixture comes to a boil.
3.Reduce the heat to medium-low, and let the mixture simmer for 5-7 minutes or until the cauliflower has softened and the mixture has thickened.
4.While the fondue is simmering, prepare the vegetables. Wash and cut the baby carrots, broccoli florets, and asparagus spears in half. Scrub and slice the fingerling potatoes.
5.After the fondue has thickened, add salt and pepper to taste. Transfer the fondue to a serving bowl and arrange the vegetables around the bowl.
6.Serve the fondue with sliced French baguette.
