1 lemon
1 roasting chicken , size 15
1 tablespoon vegemite
1/4 cup butter , softened

Instructions

1.Preheat oven to 400°F (200°C).
2.Cut the lemon in half and place both halves inside the cavity of the chicken.
3.In a small bowl, mix together the vegemite and softened butter until well combined. Brush the mixture all over the chicken.
4.Place the chicken in a roasting pan and roast for 1 hour and 20 minutes, or until the chicken is cooked through and the juices run clear when the thickest part of the meat is pierced with a fork.
