1/2 cup oil
1/2 cup berbere
3 garlic cloves , minced
2 1/2 cups water

Instructions

1.Heat a skillet over medium heat, and add the niter kebbeh and 2 finely chopped onions.
2.Sauté the onions until golden brown, then add minced garlic and berbere and mix well.
3.Add 2 and a half cups of water to the mixture, and stir well. Allow it to simmer for 5 minutes.
4.In a large bowl, mix the chickpea flour, minced onions, and salt and pepper according to taste.
5.Gradually add the spiced onion and butter mixture to the chickpea flour mixture, stirring until well combined.
6.Heat the oil in a shallow pan, and use a tablespoon to scoop the chickpea batter into the hot oil.
7.Fry the fritters in batches until they are golden brown on both sides. Drain off the excess oil using a paper towel.
