1 liter almond milk
1 liter cold water
150 g cornstarch
80 g rice flour
500 g raw sugar
1/2 cup rose water
1 cup pistachios , very finely chopped

Instructions

1.In a large bowl, whisk together almond milk, cold water, cornstarch and rice flour until well combined.
2.In a large saucepan, add raw sugar and rose water. Heat over medium heat until sugar dissolves and bring to the boil.
3.Gradually add the almond milk mixture into the saucepan, stirring constantly until the mixture thickens.
4.Pour the mixture into a shallow baking dish and cool to room temperature.
5.Once cooled, place the mixture in the freezer until set.
6.Once frozen, break the ice into small pieces and place in a food processor until it resembles a coarse snow.
7.To serve, place the ice in a bowl and top with finely chopped pistachios.
