This Vegan Thai Quorn Tenders With Lime and Cilantro recipe is a perfect plant-based alternative to traditional Thai dishes that are often made with meat or seafood. Quorn tenders, a vegetarian protein source made from a type of fungus, are seasoned with ginger and scallions and then simmered in a mixture of vegetables and spices like cabbage, zucchini, mushrooms, and cilantro. The dish is served over a bed of fragrant basmati rice, which is cooked in vegetable broth for added flavor.

Instructions

2.While the pan is heating, rinse the rice in cold water until the water runs clear, then add the rice to the saucepan with vegetable broth.
3.Once the rice mixture comes to a simmer, reduce the heat to a low simmer and cover it for 15-20 minutes until the rice is cooked through and the water is absorbed.
4.In a skillet over medium heat, cook the ginger and scallions until fragrant.
5.Add the Quorn tenders and cook for 10 minutes or until browned on all sides.
6.Add the red pepper flakes, cabbage, fish sauce, lime juice, lime zest, zucchini, and mushrooms and cook for an additional 5-7 minutes, until the vegetables are slightly tender.
