Ingredients

1 lb soft tofu , drained and crumbled
2 lbs spinach , bathed and chopped
1 onion , chopped
4 garlic cloves , minced
1 lemon , juice of
1 tablespoon dried oregano
1 -2 teaspoon salt
1 teaspoon black pepper
1 tablespoon canola oil
1/2 cup canola oil
12 -15 phyllo pastry sheets
Spanakopita is a traditional Greek dish made with spinach, feta cheese, and phyllo dough. This version is a vegan take on the classic recipe, swapping out the cheese for tofu and using canola oil in place of butter. The result is a light, crispy pastry filled with spinach and protein-packed tofu, flavored with garlic and oregano. These vegan spanakopita triangles are perfect for a light lunch, snack, or appetizer, and can be enjoyed hot or cold.

Instructions

1.Preheat the oven to 375°F.
2.In a large skillet, heat the canola oil over medium heat. Add the onion and garlic, cooking until softened.
3.Add the spinach and cook until wilted, stirring occasionally.
4.Add the crumbled tofu, lemon juice, oregano, salt, and pepper. Continue cooking until the spinach is completely wilted.
5.Remove from heat and let cool.
6.On a clean surface, lay out the phyllo pastry sheets.
7.Using a pastry brush, brush every other sheet with canola oil.
8.Cut the phyllo sheets into strips approximately 3 inches wide.
9.Place a spoonful of the filling on the end of each strip and fold into a triangle shape.
10.Brush the triangle with canola oil and place on a baking sheet.
11.Continue until all the triangles have been assembled.
12.Bake in the preheated oven for 15-20 minutes or until golden brown.
