1 tablespoon ground chile
1 tablespoon cumin , & oregano rub
1/4 cup olive oil
1 medium red onion , diced
2 poblano peppers , seeded and diced
1 zucchini , quartered and sliced
4 medium carrots , diced
2 cans hominy , rinsed and drained
2 cans pinto beans , rinsed and drained
1 can fire-roasted diced tomatoes
4 cups vegetable broth
2 tablespoons fresh lime juice
sea salt & pepper , to taste
Posole is a traditional Mexican soup that is typically made with pork, but this vegan version is just as delicious and satisfying. Instructions

1.In a large heavy-bottomed pot or Dutch oven, heat the olive oil over medium heat.
2.Add the diced onion and poblano peppers and cook until softened, about 5 minutes.
3.Add the sliced zucchini, diced carrots, and ground chile, cumin, and oregano rub. Stir well to coat the vegetables in the spices.
4.Cook for 5-7 minutes until the vegetables have softened slightly.
5.Add the hominy, pinto beans, fire-roasted diced tomatoes, and vegetable broth to the pot.
6.Bring the soup to a boil then reduce the heat and simmer for at least 20 minutes, until the vegetables are tender and the flavors have melded together.
7.Stir in the fresh lime juice and season with sea salt and black pepper to taste.
8.Serve hot with your favorite toppings, such as chopped cilantro, sliced avocado, diced red onion, and a squeeze of fresh lime juice.
