2 pieces plantains
180 g firm tofu
2 teaspoons sugar
1/2 teaspoon salt
1 cup water
1 tablespoon canola oil

Instructions

1.Heat canola oil in a pot, then sauté garlic and onions until onions are translucent.

4.Fold in cooked chickpeas, sliced plantains, cubed tofu, sugar, salt, and water. Cover and let it simmer for 15-20 minutes, or until vegetables are tender.
