1 lime , juice of
1 lemon , juice of
1/4 cup unsweetened applesauce or 1/4 cup fruit puree
1/4 cup organic virgin coconut oil ( preferred ) or 1/4 cup vegetable oil
2 teaspoons vanilla extract
1 1/2 cups fresh pineapple chunks

Instructions

1.Preheat oven to 350°F.
2.In a large bowl, whisk together the flour, sugar, chia seeds, pumpkin pie spice, baking soda, and salt until well combined.
3.In a separate smaller bowl, mix together the orange juice, lime juice, lemon juice, applesauce, coconut oil, and vanilla extract.
4.Add the wet mixture to the dry mixture and mix until just combined.
5.Pour the batter into a greased 9” cake pan.
6.Arrange the pineapple chunks on top of the batter.
7.Bake for 30-40 minutes, or until a toothpick inserted in the center of the cake comes out clean.
8.Let cool for a few minutes, then invert the cake onto a large plate.
