Ingredients

1 tablespoon tahini
2 tablespoons orange juice concentrate
2 tablespoons maple syrup
1/2 lb firm tofu ( about half a package of regular water-packed tofu )
1 teaspoon nutritional yeast
1/2 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
1 dash salt
1 cup breadcrumbs
1 can unsweetened crushed canned pineapple

Instructions

1.Preheat the oven to 375 degrees F.
2.Use a food processor to blend the tahini, orange juice concentrate, maple syrup, tofu, nutritional yeast, vanilla extract, ground cinnamon, and salt until smooth.
3.Take the breadcrumbs in a bowl.
4.Grease a muffin pan with cooking spray.
5.Place a little less than 1 tablespoon of the breadcrumbs in each muffin cup.
6.Top with a generous spoon of the tofu filling.
7.Then top with some of the crushed pineapple.
8.Finally, top with another spoon of the tofu filling.
9.Sprinkle more breadcrumbs on top of each Danish.
10.Bake for 15-18 minutes or until golden brown on top.
