2 lbs carrots ( grated )
1 cup soya milk
1 cup sugar
1/4 cup cashews
2 tablespoons dates

Instructions

1.In a non-stick pan, heat up the grated carrots over medium-high heat for 2-3 minutes.
2.Add soya milk to the pan and mix everything gently.
3.Cover the pan with a lid and cook for about 10-12 minutes, stirring occasionally.
4.Once the carrots are tender and the milk has been absorbed, add sugar and mix.
5.In a separate pan, roast the cashews until golden brown and add to the mixture.
6.De-seed the dates and chop them finely before adding them to the pan.
7.Mix everything together and cook for another 2-3 minutes on low heat.
8.Remove from heat and serve hot or chilled. Enjoy!
