Ingredients

1/4 cup unbleached cane sugar
1 3/4 cups warm water
1 tablespoon active dry yeast ( quick-rise or conventional )
6 1/2 cups unbleached flour
2 tablespoons non-hydrogenated margarine
1 tablespoon baking powder
1/4 cup vegetable oil
2 cups seitan , cut into small pieces
1/8 teaspoon salt
1/8 teaspoon pepper
1/4 cup hoisin sauce
1/4 cup hot chili sauce
1/4 cup vegan sour cream
Vegan Cha Siu Bao is a delicious take on the traditional Chinese pork buns but is made without meat, eggs, or dairy products. This makes it a great option for those following a vegan or vegetarian lifestyle. These buns are steamed or baked and filled with a savory mixture of seitan, hoisin sauce, chili sauce, and vegan sour cream. The soft and fluffy dough complements the flavorful filling of this tasty meal. It can also be enjoyed as an appetizer or snack, and can be stored in the freezer for later consumption.

Instructions

1.In a large bowl, dissolve the sugar in warm water and add the yeast. Stir to combine and let sit for about 5 minutes until the mixture becomes foamy.
2.Add 6 cups of flour to the yeast mixture and stir until a soft dough forms. Turn the dough out onto a floured surface and knead for about 5-10 minutes until the dough becomes smooth. Place it back into the bowl and cover with a damp towel. Let it rise for about an hour until it doubles in size.
3.In a pan, sauté the seitan in margarine for about 5-7 minutes until it becomes golden brown. Add the salt, pepper, hoisin sauce, hot chili sauce, and vegan sour cream to the pan and stir to combine.
4.Preheat the oven to 375°F.
5.Divide the dough into 20-25 pieces and roll each piece into a round disc. Place a spoonful of the filling into the center of each dough circle and pull the edges up and around the filling to seal the bun. Place the buns on a baking sheet lined with parchment paper. Leave some space between each bun as they will expand while baking.
6.Mix the remaining flour and baking powder together and sprinkle it over the top of each bun. Then brush the tops with vegetable oil.
7.Bake the buns at 375°F for about 18-20 minutes until they are golden brown and firm to the touch.
