Ingredients

1 tbsp olive oil
1 onion, chopped
2 cloves garlic, minced
1 jalapeno, seeded and minced
1 red bell pepper, chopped
2 tsp ground cumin
1 tsp smoked paprika
4 cups vegetable broth
3 cans black beans, drained and rinsed
1 can diced tomatoes
Salt and pepper, to taste
Juice of 1 lime
Optional toppings: chopped cilantro, avocado, tortilla chips
This vegan black bean soup is packed with flavor and nutrients. It's perfect for a cozy night in or as a meal prep option for the week. Plus, it's easy to customize with your favorite toppings like avocado, cilantro, or tortilla chips.

Instructions

1.In a large pot, heat the olive oil over medium heat.
2.Add the onion, garlic, jalapeno, and red bell pepper. Cook until softened, stirring occasionally.
3.Add the cumin and smoked paprika. Stir and cook for 1-2 minutes.
4.Add the vegetable broth, black beans, and diced tomatoes. Stir and bring to a boil.
5.Reduce heat to low and let simmer for 20 minutes.
6.Use an immersion blender to blend the soup until smooth. Alternatively, transfer to a blender and blend in batches.
7.Season with salt and pepper to taste.
8.Stir in the lime juice.
9.Serve hot with desired toppings.
