Ingredients

1 cup water
1 cup sugar
1 teaspoon vanilla extract
1/2 cup agave nectar
3 cups nuts ( Pistachios , walnuts , almost , or pecans )
1 teaspoon cinnamon
1 package phyllo dough , thawed ( you will only use about half )
3/4 cup margarine , melted
Baklava is a traditional dessert that is enjoyed by many cultures around the world. This vegan baklava is a delicious and healthier twist on the classic recipe. Instructions

1.Preheat the oven to 350°F (175°C)
2.In a saucepan, combine the water, sugar, and vanilla extract and bring the mixture to a boil. Reduce the heat to low and stir in the agave nectar. Let the mixture simmer for 10 minutes, stirring occasionally. Remove from heat and set aside.
3.In a food processor, pulse the nuts, cinnamon, and 1/4 cup of the melted margarine until the mixture is finely chopped but still coarse.
4.Lay half the phyllo sheets in a 9x13 inch baking dish and brush the sheets with melted margarine. Sprinkle a thin layer of the nut mixture over the phyllo sheets and repeat the layering process until all the nut mixture is used up.
5.Cover the nut mixture with the remaining phyllo sheets and brush the top with melted margarine. Cut the baklava into pieces with a sharp knife, making sure to cut all the way through the layers.
6.Bake the baklava for 45 minutes, until it is golden brown and crisp.
7.Remove the baked baklava from the oven and pour the cooled syrup over the hot baklava. Let it cool completely before serving.
