Ingredients

1 cup broccoli , chopped

3 tablespoons vegan mayonnaise
2 teaspoons maple syrup ( I use sugar free )
2 teaspoons soy sauce
1/4 teaspoon salt
1/4 teaspoon ginger
1/4 teaspoon cumin
1/8 teaspoon coriander
1/8 teaspoon crushed red pepper flakes
1/8 teaspoon nutmeg

Instructions

1.Steam broccoli, cauliflower, and okra in a steamer basket for 6-8 minutes until tender. Remove from heat and let cool.
2.In a medium bowl, mix together soy yogurt, vegan mayonnaise, maple syrup, soy sauce, salt, ginger, cumin, coriander, crushed red pepper flakes, and nutmeg.
3.In a large bowl, combine the cooled vegetables, pea pods, bell pepper, cherry tomatoes, and green onions.
4.Pour the dressing into the vegetable mixture and toss until well combined. Chill the salad for at least 15 minutes before serving.
