8 tortillas
400 g enchilada sauce
1 large sweet potato , peeled and finely cubed
1 medium red onion , finely sliced
1 small zucchini , finely cubed
100 g button mushrooms , sliced

1/4 cup finely chopped coriander

Instructions

1.Preheat the oven to 375°F (190°C).

6.Spoon a little of the enchilada sauce into the bottom of the dish. Place a tortilla on a flat surface and spoon some of the vegetable mixture in the center. Roll up tightly and place seam-side down in the dish. Repeat with the remaining tortillas and filling.
7.Spoon the remaining enchilada sauce over the top of the rolled tortillas. Sprinkle with cheese and coriander.
8.Bake for 20-25 minutes or until the cheese is melted and bubbling.
