Veal Tagine with Sweet Potatoes is a classic Moroccan dish that has been enjoyed for centuries in North Africa. The word 'tagine' refers both to the dish itself and to the earthenware pot in which it is traditionally cooked. This recipe takes inspiration from the traditional dish, but simplifies the cooking process by using a skillet instead of a tagine pot. The result is a rich and flavorful meal that is sure to impress your guests. The combination of tender veal, sweet potatoes, and savory olives is both comforting and exotic, making this the perfect weekend dinner for any adventurous foodie.

Instructions

1.Heat the oil in a large skillet over medium-high heat. Add the onions and brown the veal until well caramelized on all sides.
2.Add the ginger, salt, and pepper and cook, stirring occasionally, for a minute or two, until fragrant.
3.Add the tomatoes, olives, and coriander to the pan and stir well.
4.Reduce the heat to low and simmer for 20-30 minutes, or until the veal is tender.
5.While the tagine is simmering, preheat your oven to 375°F. Rub the sweet potato slices with olive oil and sprinkle with a pinch of salt.
6.Roast the potatoes in the preheated oven for 15-20 minutes or until tender.
7.Serve the tagine over the sweet potato slices, garnished with the crystallized lemons and lemon juice, to taste.
