Instructions

1.Heat olive oil and butter in a large skillet over medium-high heat.
2.Dredge veal scallopini in flour mixture seasoned with salt and pepper.
3.Dip the floured veal scallopini in the egg wash.
4.Place veal scallopini in pan, cooking for about 2 minutes on each side until golden brown.
5.Remove veal from pan and place on a plate.
6.Reduce heat to medium, add chicken broth to pan, and scrape up any browned bits.
7.Simmer for about 2 minutes, then add lemon juice and 2 tablespoons of butter.
8.Return veal to pan and cook for another 2-3 minutes in the sauce, spooning the sauce over the veal.
9.Garnish with fresh lemon slices and parsley before serving.
