4 veal shanks

1/2 cup carrot , thinly sliced , plus

2 garlic cloves ( crushed )
1 can tomato sauce ( I use Hunt 's )
1/2 cup water , plus
1 tablespoon water
1/2 teaspoon dried basil
1/8 teaspoon dried thyme
1 3/4 teaspoons dried parsley
1 bay leaf
Veal Osso Buco, an Italian classic, is a dish that is perfect for a special occasion dinner. It is a hearty and satisfying meal that is sure to impress guests. Osso Buco means 'bone with a hole' in Italian, which refers to the marrow-filled bone in the center of the veal shank. This dish is traditionally made with veal shanks, but can also be made with beef or pork. It is slow-cooked with vegetables and tomato sauce until the meat is tender and falls off the bone. This dish is usually served with risotto, polenta, or mashed potatoes.

Instructions

1.In a shallow dish, mix together 2 tbsp all-purpose flour, 1 tsp salt, and 1/8 tsp ground black pepper. Dredge the veal shanks in the mixture until well coated, shaking off excess flour.
2.Heat a large Dutch oven or skillet over medium-high heat. Add 1 tbsp butter and 1 tbsp olive oil to the pan. Once the butter has melted, add the veal shanks and cook until browned on both sides, about 3 minutes per side. Remove the shanks and set aside.
3.In the same pan, add another 2 tsp butter and 2 tsp olive oil, then add 1/2 cup chopped onion, 1/2 cup thinly sliced carrot, and 1/4 cup chopped celery. Cook until vegetables are soft, about 5 minutes.
4.Add 2 crushed garlic cloves to the pan and cook for 1 additional minute. Add 3/4 tsp all-purpose flour to the pan and cook for another minute, stirring constantly.
5.Add 1 can of tomato sauce, 1/2 cup water, 1/2 tsp dried basil, 1/8 tsp dried thyme, 1 3/4 tsp dried parsley, and 1 bay leaf to the pan. Stir to combine, then return the veal shanks to the pan, nestling them in the sauce.
6.Bring the mixture to a simmer, then reduce heat to low and cover the pan. Cook for 2-2.5 hours, stirring occasionally, until the veal is tender and falls off the bone.
7.Remove the veal shanks from the pan and set aside. Using an immersion blender or regular blender, blend the sauce until smooth. Return the veal shanks to the pan and serve hot with the sauce.
