Ingredients

1 lb veal ( or boneless chicken breasts )

2 1/2 tablespoons butter
2 tablespoons olive oil
12 ounces cremini mushrooms , sliced ( or button mushrooms )
2 large shallots , finely chopped
3/4 cup dry white wine
1 cup broth ( beef or chicken depending on meat )
1/4 teaspoon saffron thread
3/4 cup heavy cream ( or half & half )
1/2 cup frozen green pea , thawed
1 lemon , cut into wedges
Scaloppine is a traditional Italian dish that consists of thinly pounded meat, usually veal, that is sautéed and served with a sauce. In this recipe, we’re using a saffron cream sauce that is both rich and flavorful. The addition of cremini mushrooms and shallots adds a depth of flavor, while the peas add some color and sweetness to the dish. Instructions

1.Prepare the meat by pounding it until it is an even thickness. Season generously with salt and pepper.
2.Heat 1 1/2 tablespoons of butter and 1 tablespoon of olive oil in a large skillet over high heat.
3.Add the meat and cook for 2-3 minutes per side, depending on thickness. Remove from the skillet and set aside.
4.In the same skillet, heat the remaining butter and olive oil over medium-high heat.
5.Add the mushrooms and shallots, and cook for 5-7 minutes, or until the mushrooms release their juices and the shallots are softened.
6.Add the wine and broth, and bring to a boil. Reduce the heat and simmer for 5-7 minutes.
7.Add the saffron and cream, and stir to combine. Cook for an additional 2-3 minutes, or until the sauce has thickened slightly.
8.Add the peas and cook for 1-2 minutes, or until heated through.
9.Serve the scaloppine with the saffron cream sauce and lemon wedges. Enjoy!
