Ingredients

1 tablespoon corn or 1 tablespoon olive oil
1 lb fresh spinach , washed and stemmed
1 lb veal shoulder , coarsely ground
2 tablespoons minced shallots
3 tablespoons soy sauce
1 tablespoon asian sesame oil
1/2 cup finely chopped scallion , white part only . ( I use the green too . )
1/2 cup finely chopped fresh basil or 1/2 cup cilantro leaf
1 tablespoon peeled minced gingerroot
1 package round dumpling wrappers ( gyoza )
2 cups ancho chili sauce ( RECIPE FOLLOWS )
1 1/2 cups basil leaves ( to garnish )
1/4 cup finely chopped sichuan preserved vegetables ( to garnish ) ( optional )
1/2 cup fried shallots ( to garnish ) ( optional )

Instructions

1.Heat corn/olive oil in a large frying pan over medium heat.
2.Add spinach and cook until wilted, stirring occasionally.
3.In a large mixing bowl, combine ground veal, shallots, soy sauce, sesame oil, scallions, basil/cilantro, and gingerroot. Mix well.
4.Place 1 tablespoon of the filling in the center of each dumpling wrapper. Wet the edges of the wrapper with water and seal.
5.Heat a large pot of water and bring it to a boil. Reduce heat to low and add dumplings. Cook for 3 to 5 minutes or until they float to the surface.
6.To make the ancho chili sauce, blend ancho chilies, garlic, cumin, oregano, vinegar, and water in a blender until smooth. Strain the mixture through a fine mesh sieve and discard solids.
7.Serve the dumplings with the ancho chili sauce and top with basil leaves, preserved vegetables and/or fried shallots.
