Ingredients

4 loin veal chops , at least 1 1/2 inches thick , trimmed of excess fat ( can also use rib veal chops )

3 shallots , chopped
3 ounces white mushrooms , brushed clean , chopped
1 teaspoon sweet paprika , plus more for garnish
1 cup dry white wine
1/2 cup sour cream
salt , to taste
fresh ground pepper , to taste

Instructions

2.Season both sides of the veal chops with the mixture.

4.Sear veal chops in the hot oil, for 2-3 minutes on each side until browned.
5.Add shallots, mushrooms, and 1 teaspoon sweet paprika, and sauté until soft.
6.Add dry white wine and let simmer until reduced to half, for about 4-5 minutes.
7.Reduce heat to low, cover the skillet, and let the meat cook for 15-20 minutes until fully cooked.
8.Remove from heat and stir in the sour cream, salt, and ground pepper as per taste.
9.Serve hot with a sprinkle of sweet paprika.
