Ingredients

2 veal chops ( Loin or Rib )
1 large shallot
2 cloves garlic
1/2 teaspoon crushed red pepper flakes
2 teaspoons chopped fresh parsley
4 teaspoons extra virgin olive oil
2 teaspoons butter
1/4 cup dry white wine
1 can diced tomatoes ( preferably with garlic and basil )
2 teaspoons dried thyme or 1 teaspoon fresh thyme
salt and pepper

Instructions

1.Preheat the oven to 350°F.
2.Season both sides of the veal chops with salt and pepper.
3.In a large oven-safe skillet over medium-high heat, heat 2 teaspoons of olive oil.
4.Add the veal chops and cook for 3-4 minutes on each side or until browned.
5.Transfer the chops to a plate and set aside.
6.In the same skillet, add 2 teaspoons of olive oil and 2 teaspoons of butter. Once melted, add the shallots, garlic, and crushed red pepper flakes. Cook until the shallots are translucent.
7.Add the wine and stir, scraping any browned bits from the bottom of the pan.
8.Add the diced tomatoes and thyme, and simmer for a few minutes.
9.Return the veal chops to the skillet and spoon the sauce over them.
10.Transfer the skillet to the oven and bake for 10-12 minutes or until the internal temperature of the meat is 145°F for medium-rare and 160°F for medium.
11.Garnish with chopped fresh parsley before serving.
