Veal Blanquette is a traditional French stew made with boneless veal shoulder, mushrooms, onions, and a creamy white wine sauce. The dish is slow-cooked in a Dutch oven until the meat is meltingly tender and the sauce is rich and flavorful. The addition of thyme, parsley, and lemon zest adds a hint of freshness to the dish, balancing the richness of the cream sauce. It can be served with crusty bread, mashed potatoes, or rice. This dish is perfect for a cozy family dinner or a fancy dinner party.

Instructions

.Preheat oven to 325 degrees F.
.Pat the veal cubes dry with paper towels, season with salt and pepper, and dredge in flour.
.Melt 4 tablespoons of butter in a large oven-proof Dutch oven over medium heat. Add the veal in batches and brown on all sides, remove to a plate.
.Add more butter if needed and the onion to the pot, then sauté until translucent. Add the parsley sprigs, thyme, garlic, white wine, and chicken stock.
.Return the browned veal to the pot and bring to a simmer. Cover the pot, place in the oven, and braise for 1 1/2 to 2 hours, until the veal is tender.
.Remove the Dutch oven from the oven and place over medium heat. Add the remaining 1 tablespoon of butter and the sliced mushrooms. Simmer uncovered until the mushrooms are cooked through.
.Stir in the heavy cream and remaining 3 tablespoons of wine, bring to a simmer, and cook for 10-15 minutes until the sauce thickens. Add more salt and pepper to taste.
.Serve Veal Blanquette hot with rustic bread, minced parsley, and lemon zest on top.
