Ingredients

1 leek , halved lengthwise and crosswise
4 veal schnitzels
4 slices prosciutto
25 g shaved provolone cheese
plain flour , seasoned to taste ( all purpose )
2 tablespoons olive oil
60 ml dry white wine
1/4 cup chicken stock
40 g butter , chopped
Veal and Leek Scaloppine is a classic Italian dish that has been enjoyed for centuries. Instructions

1.Preheat oven to 180C.
2.Cook the halved leek in boiling salted water for 3 minutes or until just tender. Drain, rinse in cold water, then pat dry.
3.Place a slice of prosciutto on each piece of veal and top with shaved provolone. Place leek on 1 side of each veal piece, then fold in half and secure with toothpicks, cutting to fit.
4.Coat the flour and shake off excess. Heat oil in a frypan over high heat, then fry veal for 1 minute each side or until browned. Transfer to a baking dish and bake for 5 minutes or until cooked through.
5.Remove toothpicks, then transfer veal to serving plates. Pour off excess oil from pan, then add wine and stock and simmer for 2 minutes or until reduced by half. Whisk in butter until mixture has a creamy consistency. Season and pour over veal.
