3/4 cup low-fat sour cream
1 cup mushroom ( thinly sliced )

1 cup edam cheese ( grated )

Instructions

1.Preheat oven to 200°C (180°C fan-forced)
2.Peel potatoes and slice thinly in rounds
3.In a skillet or pan, sauté onions until soft and set aside.
4.Add the lean ground beef and cook until brown, then add the Vegemite and sour cream and stir well.
5.Grease a baking dish and layer the sliced potatoes at the bottom, then add the minced beef, mushroom, onion, and sliced tomatoes in that order. Repeat the layers.
6.Pour any remaining sour cream mixture over the top layer and sprinkle with grated edam cheese, and spring onions if desired.
7.Cover the baking dish with foil, and bake in the preheated oven for 1 hour.
8.Remove foil and bake for an additional 15 minutes until the cheese is golden brown.
9.Serve hot. Enjoy!
