1/2 teaspoon salt
3 egg yolks
3 egg whites , lightly beaten
1 cup milk
2 teaspoons salt
3 - 3 1/2 cups flour
Vareniky, also known as Ukrainian dumplings, are a staple in Ukrainian cuisine. Instructions

1.Mix cottage cheese, onions, salt, and egg yolks in a large bowl.
2.Gradually add flour and mix until dough forms.
3.Knead the dough for 5-10 minutes until it becomes smooth.
4.Roll the dough out on a floured surface, using a rolling pin, until it's about 1/8-inch thickness.
5.Using a biscuit cutter or glass, cut out circles of dough.
6.Place a tablespoon of cottage cheese filling in the center of each circle of dough.
7.Fold the dough over the filling and pinch the edges together to seal.
8.Drop the dumplings into boiling water, add salt and milk.
9.Boil for 5-7 minutes until the dumplings float to the top.
10.Serve hot with sour cream and chives.
