Ingredients

225 g cream cheese
1 vanilla pod , seeded
2 lemons , zest of
150 g caster sugar
2 eggs , separated
225 g sour cream
75 ml balsamic vinegar
200 g caster sugar
100 ml sparkling shiraz wine
400 g strawberries
Vanilla cream cheesecake with balsamic strawberries is a perfect dessert for a hot summer day. The creamy vanilla cheesecake is well-balanced with tartness and tangy flavour of strawberries tossed in a delicious balsamic reduction. The addition of sparkly wine to the reduction makes it interesting and adds to the appeal. Vanilla in every bite complements the savoury aroma and the texture of the cheesecake. Its elegant presentation makes it perfect for serving to guests and family at any special occasion.

Instructions

1.Preheat the oven to 160°C/gas mark 3.
2.Mix the cream cheese, vanilla seeds, lemon zest and sugar in a large mixing bowl with an electric whisk until smooth.
3.Whisk in the egg yolks.
4.Stir in the sour cream until smooth and set to one side.
5.In another mixing bowl, whisk the egg whites until stiff.
6.Gently fold the egg whites into the cheese mixture.
7.Pour the mixture into a greased 20 cm springform cake tin and bake for 45-50 minutes or until set.
8.Allow the cheesecake to cool before removing it from the tin.
9.Place the balsamic vinegar, sugar and sparkling shiraz into a saucepan and stir to combine.
10.Bring the mixture to the boil then turn down the heat and allow it to simmer for 15-20 minutes or until it has reduced and thickened.
11.Remove from the heat and set to one side.
12.Just before serving, wash and hull the strawberries and cut them in half.
13.Serve each slice of cheesecake with a couple of spoonfuls of strawberries and a drizzle of the balsamic reduction on top.
