Ingredients

2 cups half-and-half
3/4 cup vanilla flavored ground coffee
1/4 cup milk
1 cup sugar

Instructions

1.Preheat the oven to 350°F (180°C).
2.In a saucepan, combine half-and-half and coffee. Heat over medium heat until the mixture is steaming hot, stirring occasionally.
3.In a separate saucepan, combine milk, sugar, and salt. Heat until the sugar dissolves, stirring occasionally. Set aside.
4.In a medium mixing bowl, whisk eggs until light and frothy, then gradually pour the milk mixture into the eggs, whisking constantly until completely combined.
5.Next, gradually whisk the hot coffee mixture into the egg mixture until thoroughly combined.
6.Strain the final mixture through a fine-mesh sieve into a pitcher or bowl.
7.Pour water into a large roasting pan to a depth of approximately 1 inch.
8.Pour caramel syrup into ramekins to coat the bottom. Pour the flan mixture into the ramekins.
9.Place the filled ramekins into the roasting pan. Bake in the preheated oven for 40-45 minutes or until the flan is set with a slight jiggle.
10.Cool, then place into the fridge for at least 2 hours before serving.
11.Before serving, gently loosen the flans from the ramekins by gently shaking the ramekin back and forth, then flip the flan out onto serving plates.
