Ingredients

2 lbs lean ground beef ( preferably chuck )
1/2 lb pork sausage
1 large onion , chopped
1 cup sangiovese wine or 1 cup cabernet fanc wine
virgin olive oil , as needed
3 cans peeled tomatoes ( MASH , DO NOT DRAIN )
1 can tomato paste
3 cloves garlic
1 tablespoon italian seasoning
salt and pepper

Instructions

1.Heat olive oil in a large saucepan over medium-high heat. Add the onion and garlic, stirring occasionally, until softened and lightly browned.

3.Add the Italian seasoning, salt, and pepper, stirring well.
4.Add the sangiovese or cabernet sauvignon wine, stirring well and scraping the browned bits from the bottom of the pan.
5.Add the cans of peeled tomatoes with their juices, crushing them lightly with the spoon so they break apart a bit as they cook.
6.Add the tomato paste and stir well to combine.
7.Bring the sauce to a simmer over medium heat, and then reduce the heat to low and let it cook down for at least 2 hours, stirring occasionally. The longer you cook it, the richer and more flavorful it will be. Adjust salt and pepper to taste before serving.
