2 cups bengal gram dal
2 tablespoons onions , chopped
1 teaspoon salt
2 cups onions , chopped
1 cup fresh tomato , chopped

1 bay leaf
1 teaspoon anise seed
2 teaspoons red chili powder
1/2 teaspoon turmeric
1 teaspoon garam masala
2 teaspoons salt
3 garlic cloves
2 teaspoons onions , chopped
1 tablespoon chutney , gram
1 green chili
2 red chilies
1 tablespoon coconut , grated
2 tablespoons coriander , chopped
3 golden fried cashews

Instructions

1.Soak the bengal gram dal for 2 hours in warm water.
2.Drain the soaked dal and grind it to a thick batter in a mixer or blender, using as little water as possible.
3.Mix 2 tablespoons of chopped onions and 1 teaspoon of salt into the batter.
4.Heat a deep frying pan with oil and pinch off small pieces of the batter, shaping them into flat patties before deep-frying until golden brown and crispy. Set aside on paper towels to drain excess oil.
5.Heat another pan and add cinnamon stick, bay leaf, anise seed, cloves, and onions. Fry until brown and then add tomatoes, salt, garam masala, garlic, and green and red chili. Mix well and add 3 cups of water to the pot.
6.Add the gram chutney, cashews, and grated coconut and let it cook for 10 minutes.
7.Add the fried vadai to the curry and let it cook for another 2 minutes.
8.Garnish with fresh coriander and serve hot with roti or rice.
