1/2 cup vegetable oil
2 pounds boneless leg of lamb , cut into 3-inch pieces
2 large onions , thinly sliced
5 large carrots , coarsely grated
2 tablespoons cumin seeds
2 tablespoons coriander seed
1/2 cup fresh barberries
1 teaspoon whole black peppercorns
2 cups boiling water to cover
2 tablespoons salt

Instructions

1.Rinse the rice several times with cold water and soak it for 2 hours.

6.Add the cumin, coriander seeds, black peppercorns, and barberries to the pot and stir well.
7.Add 2 cups of boiling water, salt, and garlic, and bring to a boil.
8.Drain the rice and add it to the pot, stirring gently.
9.Bring the mixture to a boil again, cover with a tight-fitting lid, then transfer to the oven.
10.Bake for 1 1/2 hours until the lamb is tender and the rice is cooked.
